Sometimes on the weekends, we're in the mood for something special, but aren't in the mood to get all dressed up and spend $100+ on dinner out. So, last weekend, we treated ourselves to a $25 lobster dinner at home.
Menu :
4 - 3 ounce Lobster Tails (for $15)
2 ears of Corn, buttered
Fresh Salad with Lemon Vinaigrette
Boiled Red Potaotes
I grilled the lobster and the corn for about 5 minutes and boiled the potatoes in water for 8 minutes. To make the lobster extra special, I served it with lemon butter that I made by melting butter in the microwave with a slice of lemon in it. So simple.
Salad with Lemon Vinaigrette :
1/3 Cup of White Wine Vinegar
2 Cloves of Garlic, Minced
1 Lemon, juiced
2 Teaspoon of Salt
2 Teaspoon of Pepper
Combine all of the ingredients in a jar and shake. Store in the refrigerator.
